Oatmeal Walnut Bread and Vegetable Beef Soup

Today was a chilly cold cloudy day and I really didn’t do much of anything and certainly didn’t feel like going outside.  What I did do was bake bread and make some soup.  I just didn’t feel like sewing or quilting today.

3/4 cup milk
6 Tablespoons water
1 1/2 tablespoons butter
3 tablespoons honey
1 1/2 teaspoons salt
1 1/3 cup white flour
1 1/3 cup whole wheat flour
2 tablespoons ground flax seed (optional)
3/4 cup old fashion rolled oats
3/4 cup chopped walnuts
1 package yeast

Now at this point I will tell you this is a bread machine recipe but as I stated another time I do not like bread machines.  If you want to you place all this in the order given and place in your bread machine and go with your normal bread making instructions.

What I do is just put it all (except half of the flour) in my kitchen aide mixer (or whatever kind of strong mixer  you have) and give it a really good mixing, add the rest of the flour a little at a time until it is looking like it might be too stiff to mix and then dump it out onto a floured surface and begin kneading the rest of the flour in.  Bread dough should be kneaded for at least 10 minutes.  Put the dough into a greased bowl and a warm space and let it rise until double.  Punch the dough down and let it rise again.  After it has risen the second time form it into a loaf.  Let it rise again and bake at 350 for about 45 to 50 minutes.

I like this loaf really well and I doubled the recipe and made 8 bread rolls out of half of the dough, I like to slice these open, warm them in the microwave and have a turkey sandwich with  it.  This recipe was adapted from one in a cookbook that only calls for white flour plus the oats – I like mine healthier and I always end up changing a recipe and then call it mine :)   I normally use a lot of wheat flour and generally add ground flax seed to almost all baking it is healthy in the Omega-3 oils.

2 cups of Beef cut in cubes ( I use leftover roast for this)
3 medium potatoes cut in cubes
2 carrots – thickly sliced
2 cups of chopped celery
1 cup of frozen green beans (sliced)
1 cup of frozen corn
1 cup mushroom
1 tablespoon chopped garlic (I use the minced garlic out of a jar)
1 large onion chopped
1 large can of tomato soup
1 large carton of beef broth (or two cans)
salt and pepper to taste

Bring to a boil and then simmer until the vegetables are cooked.  This is my own recipe substitute whatever veggies your family likes.  I double this recipe and have enough for lunch for several days.

They both look yummy! This is perfect soup and bread weather for sure. Although from the look of that storm coming our way, it may be soup and bread weather for several days!

I made bread as well today, although I probably should have waited until tomorrow since I doubt we’ll lose power before Tuesday.

CJ I sure hope we don’t loose power! but we are going to get fuel for the generator tomorrow and more batteries for the flash light just in case – firewood is waiting as well.

the bread has proven to be good the second day also – you all know how homemade bread can dry out a bit quickly, this one I just popped in the microwave for 15 seconds with some butter on it and it tasted as good as it did yesterday.
