I am a fan of dark fruit cake, with a variety of dried fruits and nuts and a lot of rum. It has been maturing for weeks, and on Christmas day I will finish it off with a layer of marzipan and royal icing in the grand Irish Christmas Cake tradition.

I love fruitcake in all its variations. Hubby and I even made our wedding cake with tons of fruit. He was in university still and he faithfully added brandy to it every week for about 2 months. It was wonderful.

Karen, I have linked your post with my rhubarb apple crisp post today.

Hello Karen. I was pleased to see you are enjoying my Red and Green book. It was first published in 1990, but is still popular today. For those interested, it, and other books I have written, are available new from my website. Also, I autograph all books purchased from my website. Thanks for letting me put in a word.

Oh I do wish I had made the full recipe and not cut it by half - it taste wonderful. I sliced it up and froze part of it and didn't think to take photos. I just might have to make another one!

I love fruit cake, my DH has been making ours today, a bit late for maturing, but who cares! I may try that recipe Karen, a nice way to make a FC very moist is to do a boiled one, boiling the furit makes it juicy and succulent and holds the moisture in. Look forward to seeing your sweaters! good luck and have a wonderful Yuletide Season xx

Oh, I love fruit-cake! Can't get the ingredients over here, but I still dream of it from time to time!! I made it years ago in Canada and stuck knitting needles through it...that way the rum made it's way into the cake faster!! LOL!!

You can have fruit cake without candied fruit???? Yay!

Until I read that part, I was a big yes for "I hate fruitcake". Wonder if it's too late to request candied-fruitless-fruitcake this christmas! :)

Cheers,
Christine

Happy Birthday to your Mom, Karen!
She & I share a birth day though I am 7 years her junior.

I make a vanilla wafer fruitcake that I am told is wonderful. No liquor, no strange taste, no fuss , no muss. :)

Your quilting is wonderful, as always!
