Homemade Granola

I used to make granola all the time and then for awhile I got tired of it so I haven’t made it in some time – I had the urge to make some again and made sure I had all the ingredients on hand to make some this evening.

My daughter has a link up for recipes on her blog At Home Take 2 – you might want to check out the recipes – I always enjoy looking them over to see if there is something I new I want to make.

the recipe:

Granola

5 cups old fashioned Oats
1/3 cup canola oil
1/3 cup honey
1/3 cup coconut
3 tablespoons brown sugar
1 teaspoon vanilla
1 cup chopped nuts – you pick out what kind you want – I sometimes use chopped almonds, chopped walnuts – pumpkin seeds – mix them up use what you want
1 cup dried fruit – I use dried blueberries, cranberries, and cherries – again you use what you want
1/4 cup ground golden flax seed

Put all but the fruit in the mixer and mix it all up good until everything is good and coated.  Bake for 30 minutes at 350.  Check on it every ten minutes and turn it with a spatula so all well brown – use shallow baking pans.

After the mix is cooled off stir in the fruit.  Store in a tight lid container and it will last for weeks.

I make my own granola all the time, and we love it! I often give it as a gift to a neighbor or a friend going through a difficult time. Everyone always asks for my recipe, too, and it’s such an easy one done in the oven like yours.
